Top 5 Reasons to Get Your Girl Outside

Alpengirl 3As you know, I’m busy sunning myself on a beach getting K-Bear outside this week! Outdoor time is incredibly important to our family, whether it be snorkeling with the fish, digging in the sand, or hiking a mountain trail. I got my start at an early age, thanks to outdoor-loving parents.

Even better than the family hikes they dragged me on was the week-long canoe camp they sent me to each summer when I was 13 and 14 (insert shout-out to Alton Jones!). It was such a young, impressionable and often-times awkward age, but I remember vividly the power of the friendships I built, the freedom I felt, and the connection to nature I established. It was a mighty feeling to canoe all day and set up camp each night, all while learning how to pee in the woods, cook a meal for a team and wash dishes with minimal water. I came home each summer feeling like I could conquer anything!

So it is with happy memories that I feature this guest post by Lauren Caselli, a guide at Alpengirl Camp, an overnight, outdoor summer adventure camp for girls ages 11-17 in Montana, Hawaii, Alaska, Washington and Norway. Winter Brrr… we’ve been in a freeze here the past few weeks, as in snow from before Christmas still lingers on the ground, a rarity here on the front range of Colorado. Sure, we get plenty of sun, but once darkness falls and the temp drops even further, I find myself asking SoulDaddy all too often how soon we can move to the beach.

The irony is that I used to ski 120 days a year in the cold with never a chill. Now, I get cold just walking the dogs for 30 minutes and find myself hustling home to huddle by the fire.  Continue reading

Happy Holidays!

I’m on day four of what I am calling my 12 Days of Christmas: 12 days off from work over the Christmas and New Year’s holiday. Yipeee! I’m incredibly thankful to K-Bear’s daycare mom for taking a well-deserved break and gifting me this first-ever, extended holiday staycation.

Our first three days were spent baking and delivering goodies to the neighbors, gathering with friends for our annual Zoo Lights excursion, wrapping gifts and snuggling with K-Bear. There is something about the peace and beauty of these days leading to Christmas that make me forever happy and grateful for all we have.

I’ll be busy this week with a painting project in the house, and a snowshoe or two thanks to a winter storm coming our way just in time for a white Christmas. I’ll see you back on January 1 with a surprise!

Until then, from my family to yours, I wish you a holiday week filled with peace and love, fresh air adventures and a multitude of smiles and surprises that only a fat man in a red suit can deliver. 😉

Yoga and Ski Retreats

Yoga Ski RetreatWow, can it be that the holidays are already here? We’ve finally been getting some snow here in Colorado which always makes Christmas feel that much more special. But the white stuff has put just one thing on my mind: skiing! It’s the reason I moved to Colorado 15 years ago, and it still puts a smile on my face all these years later. As does yoga!

Finding a retreat that combines time on the hill with time on the mat would be a dream! So as I bid adieu to you until January 1 (with a special surprise or two!), and set off to enjoy my time away from work and with the family, I am happy to welcome Matt Candelaria, a friend of mine from Gaiam TV, with this guest post.

Spinach Lasagna Roll-Ups

Lasagna 7Hands down, lasagna reminds me of Sunday dinners at my grandparent’s home. Our extended family gathered around the dining room table once a week to share a meal, always Italian, with love and gratitude. I swear, Nana Pearson’s well-worn pan – layered with noodles, fresh marinara and mozzarella – never weighed less than five pounds.

These roll-ups are as worthy of any Sunday dinner as a layered lasagna, but way more fun. They also are flexible with various size baking pans, and require no messy cutting of the finished noodles. They make a fast and delicious dish to bring to those in need of a meal; I doubled this recipe and shared with friends who had a new baby. If you have family coming in for the holidays, no one will be disappointed when this dish appears, and it will feed the whole crew! Continue reading
